Olives are picked starting in December and sold year round. These all come from one farm. The colors and varieties are based on the kind of olive tree, when you pick them (green or black), the length of time they are pickled (bitter vs sweet) and the way you preserve them (dry or big and juicy).  Check out the color of the olive oil.
